Belgium chocolate Fudgy brownie

I still remember the day that changed my best friend, Harry's, life forever. We were at boarding school, far away from home when he got the news: his father had passed away from cancer. The vibrant, joking Harry I knew seemed to disappear overnight, He grew quiet and distant, and I didn’t know how to help. But I remembered something my mom always said to me: A little sweetness can ease a heavy heart.”

In the small dorm kitchen, I baked my favorite Belgian Chocolate Fudgy Brownies, soft, gooey, and rich enough to feel like a warm hug. When I handed them to Harry, I told him, “These won’t fix anything, but maybe they’ll make your day a little better.”

He took a bite, and for the first time in days, he smiled a small, soft smile but enough to remind me that sometimes, showing you care is all that matters. Now, every time I bake those brownies, I think of that moment: a little chocolate, a little sweetness, and a lot of love.

Ingredients:
  • 1 cup (226g) unsalted butter, melted
  • 2 1/4 cups (450g) granulated sugar
  • 4 large eggs, at room temperature
  • 2 tsp vanilla extract
  • 1 cup (125g) all-purpose flour
  • 1 cup (100g) unsweetened organic cocoa powder
  • 1/2 tsp salt
  • 1/2 cup chocolate chunks for extra gooeyness

Instructions:

  1. Preheat and Prepare:
Preheat your oven to 350°F (175°C). Line an 8x12-inch baking pan  with parchment paper.

  2. Melt Butter and Combine with Sugar:
In a large bowl, whisk together the melted butter and sugar until it forms a smooth, glossy mixture. This helps create that perfect crackly top!

  3. Add Eggs and Vanilla:
Beat in the eggs, one at a time, ensuring each egg is fully incorporated before adding the next. Stir in the vanilla extract.

  4. Mix in Cocoa Powder, Flour, and Salt:
Sift the cocoa powder, flour, and salt into the wet ingredients. Gently fold the dry ingredients into the batter using a spatula. Be careful not to overmix—stop as soon as there are no dry streaks left.

  5. Add Chocolate Chunks:
Fold in chocolate chunks at this step.

  6. Spread and Bake:
Pour the batter into the prepared baking pan and spread it evenly with a spatula. Bake for 25-30 minutes at 350°F (175°C), depending on how fudgy you like your brownies. A toothpick inserted in the center should come out with a few moist crumbs (not completely clean).

  7. Cool and Slice:
Allow the brownies to cool in the pan for at least 10-15 minutes, then lift them out using the parchment paper.
